Wissembourg Day Trip

Wissembourg, France, is a great day trip from Kaiserslautern.

It’s only about 1-2 hours away, depending on traffic and weather.

Wissembourg was a battle site during the Franco-Prussian war. France lost, allowing the Prussians entrance into the country.

We went on a sunny and warm day in April and it was gorgeous with flowers and trees in bloom!

Wisteria is one of my favorite scents!

There’s a large free parking lot in the city center.

And there are free restrooms!

The 13th century medieval ramparts encircle the city center and are a lovely park-like walk or a picnic on a bench in the sunshine.

The kids liked running in the old moat.

I loved the other side of the village with the canal and ramparts.

St. Peter and St. Paul’s cathedral is lovely and dates back to the 1200s!

The abbey tower dates to 1025!

We walked through town and enjoyed the fountain and flowers.

We made reservations online at Restaurant du Cygne after browsing online for somewhere with good French food.

They have prix fixe menu and lovely plats. The wait staff is extremely sweet and helpful – in at least three languages!

I chose a 4-course prix fixe with accompanying wines – asparagus salad, dorade with bell peppers, quail, and strawberries with ice cream.

Tori chose the dorade. Katie got a steak.

Alex got the chicken kids’ meal! Look at it!

Everything was superb.

The whole reason for going to Wissembourg was to get chocolates at Patisserie Rebert. We were not disappointed. My favorites are the saffron-infused truffles.

Rebert is located on a lively corner, easily recognizable by the bright red awning and crowds.

We each got a lovely pastry and we picked out a box of chocolates. The cakes were fresh and delicious a few hours later at home!

We stopped at a little grocer for some fresh peas and white asparagus on the way back to the car.

It was a fun day!

These Chocolate Spice Cookies are a hit with my family and anywhere I choose to take them.

My girls love to help in the kitchen, especially when cookies are involved!

These chocolatey cinnamon cookies are warm and delicious.

A perfect holiday treat!

We love using essential oils in baking. They have a strong flavor and aroma.

Cinnamon oil makes chocolate delectable!

Chocolate Spice Cookies

Cuisine Holiday
Prep Time 15 minutes
Cook Time 10 minutes
Total Time 25 minutes
Servings 3 dozen

Ingredients

  • 12 oz package chocolate chips
  • 3/4 cup AP flour
  • 1/2 tsp baking powder
  • 1/4 tsp kosher or sea salt
  • 1/4 cup butter
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 2 tsp vanilla
  • 2 tsp cinnamon or 5 drops cinnamon essential oil
  • 1 tsp chili pepper powder

Instructions

  1. Melt 1/2 chocolate chips in a double boiler or in the microwave.
  2. Cream butter and sugars.
  3. Add eggs. Beat until light in color. Add vanilla, cinnamon or oil, and pepper.
  4. Add melted chocolate to sugar mixture. Mix well.
  5. Whisk together flour, baking powder, and salt in a separate bowl.
  6. Add dry ingredients to wet, folding in just until mixed. Fold in the remainder of the chocolate chips
  7. Drop by spoonfuls onto baking sheet.
  8. Bake 375* for about 10 minutes or until crackly on top.

Alex just knows when I’m heading to the kitchen to make something.

He’s my little helper.

We made the best chocolate chip cookies ever on this rainy Friday.

He likes to crack the eggs too. Seriously, I just stood back, directed, and got pictures.

Yes, that’s my thumb or finger. I scrambled so fast to grab this cute shot of his concentration with that scoop that I didn’t make sure I was outta the way. And no matter how I edited or cropped it, it looked weird, so there it is.

Alex wanted to put the pans in the oven all by himself. He managed super well and I was impressed!

We baked them on two racks for 4 minutes, then switched them for another 5 minutes. Perfect!

Best Chocolate Chip Cookies Ever

Chocolate Chip Cookies

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Servings 4 dozen

Ingredients

  • 1 cup brown sugar
  • 1 cup white sugar
  • 1/2 cup olive oil
  • 1/2 cup butter (1 stick)
  • 2 large eggs
  • 2 tsp vanilla
  • 4 cups AP flour
  • 2 tsp baking soda
  • 1 tsp kosher or sea salt
  • 1 tsp cream of tartar
  • 1/2 tsp cinnamon
  • 12 oz chocolate chips

Instructions

  1. Preheat oven to 350*
  2. Mix sugars, oil, and butter.
  3. Add eggs one at a time, mixing well. Add vanilla.
  4. Add the dry ingredients. You can whisk all that in a separate bowl first, but I just pour it right in.
  5. Use a little scoop or spoons to place balls of dough on cookie sheets. I like parchment paper or silicone mats to keep cookies from sticking.
  6. Bake about 8-12 minutes. I like them prettier and crunchier.
