Mardi Gras Pancakes

Are you having Mardi Gras pancakes? Many churches do a big dinner or fundraiser. Some restaurants offer them for free!

Who doesn’t love pancakes? Add fun and you have really amazing pancakes. Then let the kids make them! Here are some delectable and fun Mardi Gras pancakes that will impress family and guests!

Of course, you need sprinkles: yellow, green, and purple!

And real whipped cream is a must! I added come real vanilla, but for adults, it would be yummy to add a tablespoon of bourbon or brandy.

Best Pancakes

Course Breakfast

Ingredients

  • 2 large eggs room temperature
  • 1-1 1/4 c milk depends on humidity
  • 3 T oil or melted butter
  • 1 1/2 c AP flour
  • 3/4 t kosher or sea salt
  • 2 t baking powder
  • 1/4 c malted milk powder

Instructions

  1. Beat the eggs and milk until light and foamy, about 3 minutes at high speed.
  2. Stir in the melted butter or oil.
  3. Whisk dry ingredient together in a separate bowl.
  4. Gently but quickly fold the dry ingredients into the egg and milk mixture. Let the batter rest for at least 15 minutes to thicken.
  5. Heat a pan or griddle to 375* Use the water drop test to make sure it’s ready.
  6. Drop 1/4 cupfuls of batter onto the lightly greased griddle. Bake on one side until bubbles begin to form and break, about 2 minutes. Turn and cook the other side, about 1 1/2 to 2 minutes. Turn over only once. Serve immediately.

This is the best meal I've had in a long time. Stu This is the best meal I've had in a long time. Stuffed scallops at The Green Marlin in Vero Beach. This place is Old Florida and I'm very emotional and nostalgic. The coleslaw is amazing! The hush puppies are exquisite. The  pico de gallo garnish is lovely. I got a Goombay smash and that's a fun rum fruit punch. My waitress, Lori, is super special. It's one of the few places open past 9:00 pm.

I just made myself the best martini I've ever had I just made myself the best martini I've ever had and I just want to thank Hemingway for an inspirational recipe, even though I did not enjoy Farewell to Arms, which I  finally finished after months of picking it up and putting it down. And I'm pretty sure I read it many years ago and I didn't like it then either. Vodka, dry vermouth, orange bitters, and a lemon twist. Very cold and shaken.

    These pancaked look SO yummy!! Because I’m gluten free, I hate to have to miss out on them. Maybe I’ll eventually find a good GF pancake recipe. :) In the mean time, I think my kids will really enjoy making (and eating!) these!
